A sugar-free, gluten-free, dairy-free snack might sound like the saddest thing you could ever eat, but these no-bake coconut cocoa bars are surprisingly good. How does one accomplish this? Start with a base of ground dates and nuts for plenty of sweetness, chewiness, and crunch. Smooth out the texture with coconut butter, then add some good quality cocoa powder and a healthy dash of salt, and you have the most craveable yet healthy snack out there.
You can easily replace the nuts with other nuts, the coconut butter with any nut butter, toast the nuts, add different spices, omit the cocoa, or even add a handful of other dried fruit to the mix (I think figs would be heavenly here). Just don’t do away with the Medjool dates- you need their particular texture for this to work.
No-Bake Coconut Cocoa Bars
1 cup shelled pistachios
1/2 cup chopped walnuts
2 cups pitted Medjool dates
1/3 cup coconut butter (also called coconut manna)
3 Tablespoons unsweetened shredded coconut
2 1/2 Tablespoons cocoa powder (Droste is a good choice)
1 1/2 Tablespoon coconut oil
1/4 teaspoon flaky salt
1/2 teaspoon vanilla extract
1. Line an 8×8 baking pan with wax paper and set aside. Place the pistachios and walnuts in the bowl of a food processor and process until finely chopped (don’t go too far or you’ll have a lovely nut butter). Add the dates and process until combined.
2. Add the remaining ingredients and mix until cohesive. Dump into the wax paper-lined pan and pack the mixture down firmly and evenly.
3. Place the bars in the freezer for about 45 minutes or until thoroughly chilled. Cut into small squares and serve.
