Juicing has become quite a popular trend among the health-set, and though I’m pretty sure I wouldn’t last more than a day on a juice fast, I do love me some fresh juice. This is my current juice obsession, and while kale juice is likely to scare people off, you’ll want to stick around for this. Kale loves acid, especially lime juice, and a healthy dose of it here along with a few apples for sweetness and a strong kick of ginger transforms this from something you drink to feel virtuous into something totally craveable.
The lime juice amounts given per glass here are based on an 8 oz. glass. I usually end up using a bit more, as I like mine quite tart.
1 bunch Lacinato kale (also called Dinosaur kale)
2″ nub of ginger
4 medium apples (I used three gala and one granny smith here, but go with however tart or sweet you’d like)
1 cup coconut water
Limes, for serving
1. Juice the kale, ginger, and apples according to manufacturer’s instructions for your juicer. Pour the juice into a small pitcher or a large glass jar. Add the coconut water and stir together.
2. Slice the limes in half and set aside. Add a few cubes of ice to each glass that you’ll be serving, pour the kale juice into each glass , then squeeze a lime half into each. If your limes aren’t juicy, you’ll need more- the kale needs a good amount of lime juice. Not enough, and the juice will fall flat. Stir, then taste. The juice should make your mouth pucker a bit; if not, add more lime juice. Serve immediately.
