This, my friends, is what I make when I need something tropical in my life during the worst of winter: a coconut pineapple smoothie with lime. It’s basically a virgin pina colada with the ratios all wrong and a healthy shot of lime juice, though it would be fantastic with something strong stirred into it. Feel free to play with the ratios as the sweetness of your pineapple and coconut will vary from batch to batch. I strongly recommend using homemade coconut milk (blend shredded coconut together with warm water, let stand for a bit, then strain)- it’s a noticeable difference in taste than canned coconut milk.
Coconut Pineapple Smoothie With Lime
2 1/2 cups coconut milk
2 1/2 cups finely diced fresh pineapple
4 teaspoons coconut sugar, plus more to taste
Juice of 2 limes
Mint leaves, for garnish
Pinch of salt
1. Blend all ingredients together in a blender or with an immersion blender. Taste and adjust flavors as needed, then chill. Serve garnished with mint leaves.
